Slight warm salad with pumpkin/butternut squash, apples and cranberries. It has sweet and tangy taste. So here is healthy, quick and easy recipe for you all to try.
- Yellow Pumpkin / Butternut Squash 2 cups, cubed
- Granny Smith Apples 1 chopped
- Cranberries 1/4 cup, dried
- Feta Cheese 1/4 cup, crumbled
- Lemon Juice 2 tsp
- Maple syrup 2 tbsp
- Vegetable Oil 1 tbsp
- Salt
Method
Preheat oven to 200 degree C. Take a baking sheet and lined with butter paper place yellow pumpkin drizzle with oil , toss to coat evenly then spread out . Roast until tender about 20 minutes.
Transfer butternut to a shallow dish, add apple and dried cranberries.
In a small bowl combine lemon juice and maple syrup and blend well. Pour dressing over pumpkin, apple and cranberries and toss to coat. Sprinkle little salt and feta cheese crumbles and mix well. Serve immediately.
