Mushroom Pepper Fry

Mushroom pepper fry, comforting stir fry with sweet green capsicum and hint of spice with black pepper. Here is recipe for you all to try.




Ingredients
  • Mushroom 250 gm, white button mushrooms
  • Onion 1 large, sliced
  • Green Capsicum 1, chop into chunks
  • Green Chilli 2 nos, slited
  • Ginger 1 small piece, finely chopped
  • Garlic 4 cloves, finely chopped
  • Lemon Juice 1 tsp
  • Curry leaves 1 sprig
  • Black peppercorns 1/2 to 1 tsp, freshly ground
  • Salt
  • Oil
  • Coriander Leaves few chopped for garnish
Method

Clean mushrooms well and trip the stems. Put them in a warm water with salt and turmeric for 2 minutes. Drain and pat dry with a clean towel. Slice them and keep it aside. 

Add oil in a heavy bottomed pan. Once hot add garlic and saute for few seconds. Add the sliced onion and saute for 1 minute. Now add chopped ginger, green chilli and curry leaves and saute for 3 minutes. 

Add the capsicum pieces and saute on medium high for 4 -5 minute, toss them in-between so that they do not burn. Add the sliced mushroom, place lid and cook on medium flame until soft cooked. Stir once in a while if there is water cook till the liquid is absorbed. Increase flame and toss the mushrooms so that they do not burn. Add black pepper powder and salt combine well. Turn off flame and add lemon juice mix well. Now put it in a serving bowl and add chopped coriander leaves and serve warm. 

NB: If you want dry and crisp saute accordingly. I wanted with little liquid so i didn't dry properly. Enjoy cooking..
