African Spinach With Peanuts

African Spinach With Peanuts, a West African delicacy. Its good as a side dish with rice or as a vegetarian main dish.

  • Spinach 1 medium bunch
  • Onion 1 large , chopped
  • Green Chilli 2, chopped
  • Tomato 1 large, chopped
  • Salt
  • Pepper 1/4 tsp
  • Peanuts 1 tbsp, crushed
  • Oil

Heat a skillet or medium size pan on medium flame and cook onion and green chilli. Saute for 4 to 5 minutes or until soft. 

Add tomato and spinach to the pan and saute for 2 minutes. Cover and cook until spinach is soft. Stir in all remaining ingredients. Cook until everything combined well. Serve with cooked rice or couscous or with grilled chicken.
