Ambrosia

Today is the day that one year ago I decided to start a food blog and to post a recipe everyday.

Today is my 365th post in this blog. I started this journey on 18th Dec 2014 and has been posting a recipe daily without a break till now. So this marks post no 365. Thank you all for coming along for the ride with me. 

Today I'm posting Ambrosia which is a variation on the traditional fruit salad. It contains fresh sweet pineapple, mandarin oranges or other oranges, miniature marshmallows and coconut. Its an American dish originated in the early 19th century.



Ingredients
  • Heavy Cream 1/2 cup 
  • Sour Cream 2 to 3 tbsp 
  • Sugar 3 to 4 tbsp, powdered 
  • Marshmallows 3 cups 
  • Orange Segments 1 cup 
  • Pineapple 1 cup, chopped 
  • Apple 1 chopped 
  • Banana 1 chopped 
  • Strawberries few, sliced 
  • Cherries 1/2 cup, can one, drained 
  • Pecan Nuts 1/2 cup, toasted and chopped 
  • Coconut 1 cup, grated fresh one or desiccated one 
  • Fresh Cherry few for garnishing 
  • Roasted coconut 1 tbsp for garnishing. 
Method

Place the cream and sugar into the bowl, using hand blender or mixer whisk and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, banana, apple, strawberries, coconut, pecans and cherries and stir to combine. Cover and place in the refrigerator for 2 hours before serving. 

NB: Please adjust sugar and cream according to your taste. You can add some cream on top while serving. Enjoy..
