Thenga Choru With Konchu ( Rice cooked in Coconut milk with Prawns)

Thenga choru, its a Malabar rice variant before conquered biriyani. Its a popular rice among muslim families. This rice doesn't need any side dish. I have got this recipe from my Muslim friends. Here is simple and easy recipe for you all to try.



Ingredients
  • Rice 2cups, small penni rice
  • Prawns 500gm
  • Coconut 3 cup, grated
  • Shallots 6 nos, sliced
  • Green Chilli 4 nos
  • Coriander Powder 1 tsp
  • Red Chilli Powder 1/2 tsp +1/2 tsp
  • Turmeric Powder 1/4 tsp + 1/4 tsp
  • Onion 1 medium size, sliced
  • Tomato 1 medium size, chopped
  • Ginger 1 medium size, chopped
  • Garlic 5 cloves, chopped
  • Green chilli 4 nos, slited
  • Fennel Seeds 1 1/2 tsp
  • Cumin Seeds 1 tsp
  • Coriander Powder 1 tsp
  • Garam Masala 1/4 tsp
  • Curry Leaves 2 sprigs
  • Salt
  • Ghee 2 tsp
  • Oil 

Method

Clean and wash prawns well, drain water and marinate prawns with little red chilli powder1/2 tsp, turmeric powder 1/4 tsp and salt.

Out of 2 1/2  cup of shredded coconut extract 3 cup of first extract and 2 cup of second extract and keep aside.

Roast cumin seeds and fennel seeds once cool put it in a grinder and make smooth powder and keep it aside. 

Heat a non stick pan with little oil and shallow fry the prawns. Medium fry, not too hard and crispy. In the same pan add little more oil and add sliced onion and saute for 1 minute, now add the curry leaves, chopped ginger and garlic and saute for few seconds. Add red chilli powder 1/2 tsp, turmeric powder 1/4 tsp, coriander powder 1 tsp, garam masala 1/4 tsp and cumin and fennel powder. Add chopped tomato and salt saute well till tomato become soft. Add fried prawns in to this and combine well. Cover and cook in medium flame for 1 minute. Check salt if need add accordingly.

Heat a medium size sauce pan add ghee and oil and put sliced shallots and fry till it becomes brown colour. Now add the rice and saute for 1 minute. Now add 3 cup of thin coconut milk and cook the rice in medium low flame. Once the rice cooked half add the prawns masala and 1 1/2 cup thick coconut milk and mixwell and cook till the rice soft and cooked well. 

NB: Instaed of prawns you can use mussels (kallumakaya) for this rice. Some rice takes more coconut milk to get cooked, so use coconut milk accordingly. Enjoy cooking..
