Vegetable Cutlets

Mixed vegetable cutlet is healthy and nutritious snack with Indian spices. Its good for  tea time snack or make them into tiny bites for a party. Here is recipe for you all to try.





Ingredients

  • Potatoes 3 boiled. peeled and mashed
  • Carrot 1, steamed and cut into small cubes
  • Green Peas 2 tbsp, steamed
  • Beetroot 1 small, steamed and cut into small cubes
  • Onion 1 large, chopped
  • Ginger 1/2 inch piece, chopped
  • Garlic 5 cloves, chopped
  • Green Chilli 4 nos, chopped
  • Coriander Leaves few, chopped
  • Garam Masala powder 1 tsp
  • Turmeric Powder a pinch
  • Red chilli powder 1/2 tsp
  • Coriander powder 1/2 tsp
  • Cumin seeds 1 tsp
  • Salt
  • Egg 1
  • Bread Crumbs 1/4 cup
  • Oil
Method

Heat a pan with little oil, add cumin seeds, once its leaves aroma add chopped ginger and garlic and saute for few seconds. Now add chopped onion and saute for 1 minute. Add chopped green chilli and saute for few seconds. Now add garam masala powder, turmeric powder, red chilli powder and coriander powder saute for few seconds. Now add chopped carrots, beetroot and green peas sure for 1 minute. Add salt and combine well. Now add chopped coriander leaves and mashed potatoes and combine well. Put off the flame and keep it aside. 

Once the above mixture cools down shape this mixture into lemon size balls and flatten them a little between your palms. Dip these flat cutlets in the egg white and then followed by the bread crumbs. Continue the same process with the remaining cutlets. 


Heat a kadai or skillet with oil to deep fry the cutlets. Once oil is heat up reduce flame to medium and fry cutlets. Serve this warm cutlets with tomato ketch up or any other same which you like. 


NB: I have added only few vegetables in this you can add other veggies such as sweet corn, capsicum , spring onion etc.. Avoid vegetables that might make the cutlets soggy. If you want to make complete veg cutlet then avoid egg and just dip the cutlets in bread crumbs or make a thin paste with maida(all purpose flour) dip it in it and then to bread crumbs and fry. You can shallow fry these cutlets, here i deep fried them. Enjoy cooking..
