Cherry Coconut Cake in Airfryer

The ultimate tea cake with the taste of cherry and coconut. Here is easy cake recipe for you all to try. I have baked this cake in the Airfryer (Philips). You can make this recipe in normal oven as well.  


Ingredients

  • Self Raising Flour 2 cups
  • Butter 1/2 cup
  • Sugar 3/4 cup
  • Eggs 2 , separated 
  • Desiccated Coconut 1/2 cup
  • Glace Cherries 3/4 cup, sliced
  • Orange juice 1 cup, 250ml

Method

Preheat oven to 180 C . Grease a loaf pan and keep aside. Now beat butter with an electric mixer, add sugar and beat well until light and fluffy. Add yolks beat until combined. Stir in coconut and cherries. Now stir in the half sifted flour with half orange juice, then stir in the remaining flour and orange juice. 

Beat egg whites in a small bowl until soft peaks form then gently for into cake mixture. Bake at 180 degree C for 40 minutes to 1 hour, until golden or until a skewer inserted and comes out clean. Keep for 5 minutes before cooling on wire rack.

NB: Oven temperature are given as a guideline only. You can adjust temperature depending on your oven. I baked this cake in the Airfryer, preheated air fryer at maximum(200) for 5 minutes then i reduced temperature into 180 and baked for 25 to 30 minutes. I used small cake trey so i could make 2 small cakes in the airfrier with the above measurement. If you are using normal oven you can use 14cm*24cm loaf pan. 


If you are using all purpose flour instead of self raising flour then add 1 tsp of baking powder. Enjoy cooking.
