Carrot rice, a quick one pot meal. Its healthy, nutritious and delicious dish. Its great for your lunch box or your kid's tiffin. Here is recipe for you all to try.
- Basmati Rice 2 cup
- Carrot 3 medium size, grated
- Onion 1 big, sliced
- Tomato 1 medium size, chopped
- Ginger 1 small piece, chopped
- Green Chilli 4 slitted
- Coriander Leaves few chopped
- Ground Nut 2 to 3tbsp, roasted in ghee
- Turmeric Powder 1/4 tsp
- Red Chilli Powder 1/2 tsp
- Kashmiri Chilli Powder 1/4 tsp
- Garam Masala a pinch
- Cinnamon Stick 1 piece
- Cloves 5 nos
- Salt
- Ghee
- Oil
Method
Wash and drain Basmati rice. Heat a pressure cooker on medium flame put ghee once it melts add cinnamon, cloves and cardamom. Once it leaves aroma add drained basmati rice. Now roast basmati rice till it becomes crispy. Add little salt in the rice while saluting. Once rice became crispy remove from the pressure cooker and keep aside. Now add oil in the pressure cooker put ginger and saute for few seconds. Now add sliced onion and saute for 2 minutes. Add slitted green chilli and saute for 1 minute. Add grated carrot and saute for few seconds. Add turmeric powder, red chilli powder, kashmiri chilli powder and garam masala, saute for few seconds. Add chopped tomato and salt combine well. Add roasted basmati rice and 4 cups of water check salt if need add accordingly. Cover and cook for one whistle. Once pressure goes off open and add roasted peanuts and chopped coriander leaves. Serve warm with Raita or Pickle.
NB: If you have left over cooked rice its a great way to use those. So you can make carrot masala and mix the cooked rice, then no need to put it in the pressure cooker. Enjoy cooking.
