Savoury Pancakes

Pancakes are also served with savoury fillings. Here i used zucchini and carrots, you can use bacon or salami along with some vegetables. Here is delicious and healthy savoury pancake recipe for you all to try.

  • Zucchini 1 medium size
  • Carrots 2 medium size, peeled 
  • Spring Onion 1 bunch
  • Green Chilli 2 nos, chopped finely
  • Garlic 3 cloves, crushed
  • Parsley 1/2 bunch, chopped
  • Pan cake mix 1 pkt
  • Baking powder 1/4 tsp
  • Salt

Grate the Zucchini and carrots using the large holes on the grater. Thinly slice the spring onion. 

If you are using store bought pan cake mix, then prepare batter according to the packet instructions. Else prepare pan cake batter at home ( All purpose flour 1 1/2 cup, Sugar 1 tbsp, Baking soda 1/2 tsp, Salt 1/2 tsp, 1 1/2 cup milk, 1 egg, 1 tbsp vegetable oil. In a bowl mix together all the dry ingredients. Make a well in the centre and pour in the milk, then egg, oil, whisk until mixed but still a bit lumpy)

Fold the vegetables into the prepared pancake batter. Warm a skillet or pan over medium high heat and brush it gently with olive oil, use a 1 ladle of pancake batter on to the warmed pan / skillet. Cook 3 to 4 minutes, until the outer edges have set, then flip. Cook an additional 2 to 3 minutes and remove from heat. Serve warm with butter, sour cream , chilli sauce or with your favourite chutney. 

NB: Please take care the batter should not be liquidy because we are adding zucchini, it leaves liquid to the mix. Enjoy cooking..
