Healthy, delicious and flavourful Aloo Palak. Its a thick gravy of spinach cooked with potatoes. I think there are many ways of making this dish, here I tried simple recipe. Here is recipe for you all to try.
Ingredients
- Spinach / Palak 300gm
- Ginger 1 medium size piece, chopped
- Garlic 2 cloves, chopped
- Onion 1 large, chopped
- Green Chilli 2 or 3, chopped
- Potato 2 nos
- Turmeric Powder 1 tsp
- Coriander Powder 1/2 tsp
- Garam Masala Powder 1 tsp
- Cumin Power 1/2 tsp
- Butter 3 to 4 tbsp
- Cumin Seeds 1 tsp
- Fresh Cream 1 tbsp (optional)
- Salt
Method
Clean and rinse spinach leaves well, drain and chop the spinach leaves and keep it aside.
In a pan cook the spinach leaves with garlic, onions and the green chillies about 5 to 10 minutes. Remove from the pan and blend to a fine paste and keep it aside.
Meanwhile boil the potatoes with salt until done, or pressure cook the potatoes for 2 to 3 whistle. Once it cold cut into cubes and keep it aside.
Heat butter in a pan, fry cumin seeds along with spinach onion paste and simmer for a few minutes. Add the cooked potatoes, garam masala, coriander powder, turmeric powder, and cumin powder and a little water if needed. Simmer for few minutes till potatoes absorb the flavour.
Add fresh cream if desired. Serve warm with Jeera rice, roti or nan.
