Chicken Quesadilla

Quesadilla, its originated from Mexico and is a flat circle tortilla, warmed to soften it enough to be folded in half, and then filled. Stuffing like cooked veggies, cooked meat or chicken with cheese. In some places quesadillas are topped with guacamole or salsas. You can make grilled quesadillas as well. Here is quick and easy recipe for you all to try.




Ingredients
  • Olive Oil 2 tbsp
  • Chicken Breast 500gm
  • Taco Spice Mix / Cajun Spice Mix 2 tbsp( its mix of salt, garlic powder, paprika, black pepper, onion powder, cayenne pepper, oregano, thyme and red chilli flakes )
  • Pepper Powder 1/4 tsp
  • Green Capsicum 1, sliced into strips
  • Red Capsicum 1, sliced into strips
  • Onion 1 large, cut into half and then slice it.
  • Butter for frying
  • Tortillas / Wrapes 4 or 6
  • Cheddar Cheese 2 1/2 cup , grated
  • Salt
  • Pico De Gallo for serving
Ingredients for Pico De Gallo
  • Cherry Tomatoes 8 to 10 nos, chopped
  • Red Onion 1 big , chopped
  • Coriander Leaves 1 cup, chopped
  • JalapeƱos 1 , chopped
  • Lime 1 
  • Salt
Method

Clean and cut chicken breast into strip, drain water well and marinate chicken with pepper powder, salt and cajun spices. Keep it for 15 to 20 minutes. 

Heat 1 tbsp of olive oil in a pan on medium heat. Add the chicken strips to the pan and saute over medium heat until don, about 6 to 8 minutes. Set aside.


Add 1 tbsp of olive oil in the same pan over medium heat. Add sliced onion and saute for 2 minutes. Now add sliced green and red capsicum. Saute for 3 to 4 minutes. Season with little salt and pepper. Remove from fire and keep it aside. 

Sizzle 1/2 tbsp of butter in a separate pan over medium heat and lay a tortilla / wrap in the pan. Then build the quesadilla by laying grated cheese on the bottom, then chicken and cooked capsicum mix. Top with a little more grated cheese and top with a second wrap. 

When the wrap is golden and crispy on the first side, carefully flip the quesadilla to the other side, adding another 1/2 tbsp of butter to the pan at the same time. Continue cooking until the second side is golden. Repeat with the remaining wraps and filling. 

Cut each quesadilla into wedges and serve with Pico De Gallo.

Pico De Gallo 

Dice up equal quantities of tomatoes and onion. Roughly chop the coriander leaves slice and chop the jalapeƱo pepper. Now put all ingredients into a bowl. Slice the lime and squeeze the juice, sprinkle salt and stir together until combined.

NB: Quesadilla you can fold in deferent ways. You can cut circle tortilla into half then stuff in one side and cover with other side, thats the easy way. The filling won't fall when you flip it. The cheese i put very little only you can add some more cheese so that it stick well inside the tortilla. Enjoy cooking..
