Carrot Coconut ladoo, its delicious, rich and yummy sweet that can be prepared very quickly. I know you all used to make carrot halwa, its just a twist with carrot halwa. Im sure everyone will love this sweet. Carrots are good for our health, it reduces cholesterol, prevents from heart attacks, warding off of certain cancers, improving vision and reducing the signs of premature aging. So try to include carrot in your daily cooking. Here is recipe for you all to try.
Ingredients
- Carrots 4 nos
- Coconut 2 cup, grated
- Condensed Milk 1 tin
- Cashew nuts 3 tbsp, broken
- Milk 3 tbsp
- Cardamom Powder 2 tsp
- Ghee
Method
Wash carrots and peel off the outer skin. Then pat dry and grate the carrots and keep it aside. Heat 2 1/2 tbsp of ghee in a non stick pan and fry case nuts until golden and set aside. In the same pan, add grated carrots and saute for 10 minutes on a low flame until its soft and raw smell goes. Add milk and cook for 3 minutes and add grated 1 1/2 cup coconut and cook on low flame. Add condensed milk to it and cook for 5 minutes until the condensed milk is absorbed.
Add cardamom powdered fried cashew nuts into it and mix well. Switch off the flame. Allow this mixture to cool down. Take a small portion of the mixture and from a small ball with the palm of your hands. Spread 1/2 coconut in a plate. Roll the carrot ladoos in the coconut and keep it in a plate or paper cup cakes and serve.
NB: You get 15 to 18 ladoos with above ingredients. It will stay in in the fridge for few days. Enjoy cooking..
