Vegetable Puff

Spicy Kerala style vegetable puff. Very popular evening snack in India. Hot puff with a tea is an awesome combination. Here is easy and simple recipe for you all to try.





Ingredients
  • Cumin Seeds 1/4 tsp
  • Onion 1 medium size, chopped
  • Green Chilli 2 nos, chopped
  • Garlic 4 cloves, chopped
  • Ginger 1 small piece, chopped
  • Turmeric Powder 1/4 tsp
  • Red Chilli Powdere 1/2 to 1 tsp, according to your spice level.
  • Garam Masala 1/2 tsp
  • Pepper Powder 1/4 tsp
  • Carrot 1 chopped
  • Green Peas 1/4 cup, boiled
  • Potato 1 large, boiled and cubed
  • Coriander Leaves few chopped
  • Salt
  • Oil
  • Egg 1
  • Puff Pastry sheets / Squares 6 nos
Method

Keep the puff pastry sheets at room temperature for 30 minutes or instructed in the packet.
Heat oil in a pan, add cumin seeds and let it splutter. Add chopped onion and saute for 2 minutes. Add chopped ginger and garlic saute for few seconds, then add chopped green chilli saute for a minute. Saute until onion turns golden brown. Reduce flame to low and add turmeric powder, red chilli powder, garam masala and saute well. Add 1 tbsp of water and stir well. Add carrot and 2 tbsp of water and mix well. Cover and cook for 2 minutes. Add boiled green peas and potato cubes coming well. Add salt and pepper powder cook for few minutes. Switch of the flame and add chopped coriander leaves and mix well. Keep it aside.

Pre heat oven to 200 degree C, Line a baking trey with butter paper or grease the trey with oil.

Place 1 1/2 tbsp of the prepared masala on a pastry sheet. Fold it over and seal the edges. Brush the egg white on top and bake in 180 degree C for 20 to 25 minutes or until it turns golden brown. Serve warm with ketch up or with pudhina chutney.

NB: if you want to make complete veg then avoid egg and brush milk on top.
