Pav Bhaji

Yum
Pav Bhaji, easy to cook and a nice hot meal to prepare on a lazy day. Its spicy blend of vegetables in tomato gravy and served with Pav. Here is recipe for you all to try.



Ingredients
  • Pav / Buns 4 nos
  • Butter 2 tbsp
For the bhaji
  • Potato 2 nos, boiled and mashed
  • Cauliflower 1/2 cup 
  • Green Peas 1/4 cup
  • Carrots 1 chopped
  • Onion 1 chopped
  • Capsicum half one, chopped
  • Green Chilli 2 nos, slited
  • Garlic 3 cloves, chopped
  • Tomatoes 2 medium size chopped
  • Turmeric Powder 1/2 tsp
  • Red Chilli Powder 1/2 tsp 
  • Kashmiri Chilli Powder 1/2 tsp
  • Pav bhaji masala Or (Coriander powder 1tsp, Garam Masala 1/2 tsp, Roasted Cumin powder, Roasted Cinnamon powder and dry mango powder) 
  • Coriander Leaves few, chopped
  • Salt
  • Butter 
For Serving
  • Onion slices
  • Lemon wedges
  • Coriander leaves chopped
Method

Clean and cut all the vegetables and keep it aside. Boil the cauliflower, green peas and carrot till they are soft, drain the excess water and keep it aside.

Heat butter in a large pan, add the onion and capsicum and saute for 2 minutes. Then add the prepared chilli -garlic paste and saute till the onion softens. Now add chopped tomatoes and simmer till the oil separates. Add the turmeric powder, red chilli powder, kashmiri chilli powder, fav bhaji masala, salt and cook for 1 to 2 minutes. Add the boiled vegetables and potatoes and mash well, if need add 1/2 cup of water.

Slice each fav into 2 horizontally. Apply a little butter to each side and sprinkle with a little fav bhaji masala, if desired. 

Heat a large Tava and cook the Pav/Bun on both sides till the pieces are lightly browned. Serve the hot bhaji top with onion slices, Pav and lemon wedges. 

NB: Pav Bhaji masala is available at most grocery stores, if you dont want to use that use home fresh masala powderes which I mentioned above. Enjoy cooking..
