We normaly make kolahpuri vegetarian gravy. Here I tried with Egg, here is recipe for you all to try. Its delicious and tasty curry goes well with warm rice or roti.
Ingredients
- Egg 2 nos, hard boiled and peeled
- Cloves 4 nos
- Black pepper corns 1 tsp
- Onion 1 medium size, chopped
- Garlic 4 cloves, chopped
- Ginger 1 pieces , chopped
- Tomatoes 2 nos, small size, diced
- Dry Red Chillies 3 to 4 nos
- Turmeric Powder 1/4 tsp
- Coconut 2 tbsp, grated
- Khuskhus / Poppy seeds 1 tsp
- Salt
- Water 1 cup
- Oil
Hard boil eggs. Meanwhile chop onion, ginger, garlic and tomato. Heat oil in a pan / kadai, once its hot add crushed cloves and pepper corns. Add onion and saute till it becomes soft.
Add ginger and garlic, saute for few seconds till the raw smell goes away. Add dry red chillies, turmeric powder, poppy seeds and coconut. Saute for 2 minutes.
Add tomato and continue sautéing till tomato becomes soft and mussy and the masala releases the aroma. allow this mixture to cool and grind to a smooth paste. If required add very little water.
Now peel the skin of the eggs and cut into 2 halves or just prick them using a fork or knife.
Heat a pan and add oil, saute eggs once it done, transfer to a plate. Add the masala paste to the pan carefully. Add a cup of water. Mix well ad let it boil once. Add halved and sauted egg and salt now, mix well. check salt if need add accordingly. Cover the pan and simmer it in low flame for few minutes. Cook till the gravy thickens and gravy gets the required consistency. Serve with Roti and Pulav.
