Mexican Chicken

Mexican Cousine is one  of the world's great cuisines, its delicious and flavourful.  Quick and easy Mexican chicken, goes well with nudles or rice. Here is recipe for you all to try.




Ingredients

  • Boneless Chicken Breasts 4 
  • Black Pepper 1/4 tsp
  • Cumin Powder 1 pinch
  • Garlic 2 cloves, minced
  • Lemon Juice 1 tsp
  • Cheddar Cheese 1 cup
  • Salsa 1 cup
  • Olive oil / Vegetable Oil / Cooking Sprey
Method

Pre heat oven to 190 degree C.

Marinate chicken with lemon juice, cumin powder, black pepper powder and salt, keep it aside for 20 minutes. 

Heat a skillet or pan on medium flame, add little olive oil/ vegetable oil/ cooking spray then place chicken in hot oil. Cook until brown on both sides, it will take 10 minutes. 

Transfer chicken to baking dish, top with salsa and cheese and bake in preheated oven until cheese is bubbly and starts to brown, for 15 minutes.

To Make Salsa
  • Dried Chilli 5 to 6 nos
  • Tomatoes 3 nos, blanched
  • Onion 1 small size
  • Jalapeno Pepper 1
  • Garlic 2 cloves 
  • Coriander Leaves 1 bunch, chopped
  • Lemon Juice 1 tsp
  • Black Pepper 1/2 tsp
  • Salt
In a grinder place the dry red chilli and blend well. Now add blanched tomatoes, sliced jalepeno, onion, garlic , coriander leaves, lemon juice salt and pepper and blend until you get the chutney consistency but not chunky salsa. 

You can refrigerate this salsa for 1 week . 

NB: While baking you can add salsa and cheese according to your taste, some likes more cheesy flavour so.. Enjoy cooking..
