Carrot Chutney

Its another awesome combination of chutney, carrot with coconut and its one of the easy and healthy chutney too. Here is the recipe for you all to try.




Ingredients

  • Carrot 2 grated
  • Coconut 1/2 cup grated
  • Urad Dal 1 tbsp
  • Cumin Seeds 1/4 tsp
  • Green chilli 2
  • Ginger a small piece chopped
  • Dry Red chilli 4 nos
  • Turmeric Powder a pinch
  • Tamarind Pulp 1 1/2 tsp
  • Salt
To temper

  • Oil
  • Mustard seeds 1/2 tsp
  • Curry Leaves 2 sprig
  • Dry Red Chilli 2 nos

Method


Heat a non stick pan with little oil, fry the urad dal ,cumin seeds and red chillies till golden brown. Fry the grated carrots till raw smell goes, add ginger and green chilli saute for a 1 minute, keep aside. 


Grind the sauted ingredients together along with coconut, tamarind and salt with required amount of water to a smooth chutney.


Temper mustard seeds, dry red chilli and curry leaves and pour over the chutney. Serve with idli or dosa.
