Parippu Cheera Curry, another healthy food. I have mentioned earlier the health benefits of Amaranth Leaves / Cheera. Its good source of anti-oxidants, folic acid and iron. Parippu/ Lentils is a good source of proteins. So we can include this curry in our daily cooking. So here is the recipe for you all to try.
- Toor Dal / Tuvara Parippu 3/4 cup
- Amaranth Leaves / Cheera 2 medium bunches
- Green Chillies 3 slit
- Garlic cloves 5
- Turmeric Powder 1/2 tsp
- Chilli Powder 1/2 tsp
- Salt
For grinding
- Coconut 1/2 cup , grated
- Cumin Seeds 1/4 tsp
- Water
For Tempering
- Coconut oil 2 tbsp
- Mustard seeds 1/2 tsp
- Dry Red chilli 2
- Shallot 3, sliced
- Curry Leaves few
Method
Pressure cook dal with enough water for 1 whistle. Clean, rinse nicely with water and chop the amaranth leaves. Add amaranth leaves, green chillies, garlic, turmeric and chilli powder to the cooked dal and cook for some more time till the leaves soft and cooked.
Meanwhile, grind together the ingredients given above to a smooth paste. Add this to the cooked dal and spinach and let it boil.
Heat oil in a pan and splutter mustard seeds. Add dry chillies, sliced onions and curry leaves. Fry till you get a nice aroma. Pour this over the curry. Serve warm with Rice or Roti.
