Kadachakka Varutharachathu (Bread fruit in roasted coconut gravy)

You can try this delicious curry for a change. Easy to make and flavoured with roasted coconut, garam masala and curry leaves. Here is the recipe.


Ingredients
  • Bread Fruit / Kadachakka 1 medium
  • Salt
  • Turmeric Powder 1/4 tsp
  • Chilli Powder 1/4 tsp
  • Green Chilli 4 sliced
  • Garlic 5 cloves chopped
  • Tomato 1 medium, chopped
  • Curry Leaves 
  • Dry Red chilli
  • Onion 1 medium size sliced
To Roast and Grind
  • Oil 2 tsp
  • Fennel Seeds 1/2 tsp
  • Cumin Seeds 1/4 tsp
  • Pepper cornes 1/4 tsp
  • Garlic 2 cloves chopped
  • Shallots / Small Onions 4 nos chopped
  • Coconut 1/2 cup grated
  • Chilli Powder 1 tsp
  • Turmeric Powder 1/4 tsp
  • Coriander Powder 2 tsp
  • Garam Masala 1/4 tsp

Method

Remove tha bread fruit skin and midrib, chop into small cubes , rinse in turmeric water and keep it aside. In a Kadai add 2 cups of water, cubed bread fruit, turmeric powder, red chilli powder, onion, green chilli, garlic and salt, close the lid and cook for 8 to 10 minutes, it should be half cooked. 

Meanwhile heat oil in a pan and add fennel seeds,cumin seeds and pepper cornes saute for 1 minute. Now add chopped garlic and shallots saute for 1 minute. Now add grated coconut and roast till light golden colour. Add garam masala, red chilli powder, turmeric powder and coriander powder saute for few seconds and switch off the flame, allow the mixture to cool. 

Grind this mixture as a smooth paste. While grinding add some water . Add this ground paste, tomato and few curry leaves and salt , add water if needed. Cook till the gravy thickens and the colour turns darker. Put off flame and keep it aside. Heat 1 tsp oil in a pan fry few curry leaves and dry red chilli and pour into the gravy and serve hot with Rice, Roti or Dosa. Enjoy.

NB: You can apply oil in your hand while cutting the bread fruit so that the milky latex won't stick on your hands. If you want to cook in pressure cooker, you can cook for one whistle else bread fruit will become more soft, don't over cook. Enjoy cooking..
