Kashmiri Pulav, its a mild flavour rice with full of dry fruits, you can prepare this on special occasion. Here is the recipe for you all to try.
- Basmati Rice 1 cup
- Ghee 2 to 4 tbsp
- Coriander leaves 3 tbsp
- Ginger 1 inch piece chopped
- Garlic 5 cloves chopped
- Fennel Seeds 1 tsp
- Green Chilli 2 chopped
- Onion 1 medium size sliced
- Green Peas 1/4 cup
- Raisins 3 tbsp
- Cashew nuts 3 tbsp
- Almonds 3 tbsp
- Pistachios 10 nos
- Kashmiri Red chilli powder 1/2 tsp
- Cumin Seeds 1/2 tsp
- Cardamom 2
- Cinnamon stick 1 inch piece
- Clove 4
- Black Pepper 6 - 8
- Bay leaf 2
Method
Wash and rinse rice, drain and keep it aside. Grind together green chilli, fennel seeds, ginger and garlic, make a smooth paste and keep it aside.
Take a small pan and add ghee, once its hot, add dry fruits saute for few minutes and keep it aside.
Take a thick bottomed medium size sauce pan, heat 2 tbsp ghee and once its hot, add cumin seeds, cardamom, cinnamon stick, clove, black pepper and bay leaf. Saute for few minutes. Now add sliced onion and green peas saute for 2 to 3 minutes, Add ginger, garlic, green chilli and fennel paste saute for few more minutes, now we nice aroma can be smelled, add little more ghee and rice and fry nicely for 3 to 4 minutes. Add salt and kashmiri red chilli powder saute for 2 minutes.
Now add 2 cups of water in rice mix well. Cover and cook for 5 minutes on low flame. check and stir the rice nicely. Cook for 5 more minutes and stir nicely. cover and cook for 3 minutes. Open and check Rice must be cooked by now. Turn off the flame keep the rice as it is for 10 minutes. Take out pulav in a plate or bowl garnish it with green coriander and dry fruits. Serve warm with Raita.
NB: You can use cooked rice for making this pulav, For this saute all spices and dry fruits. Add these saute ingredients in cooked rice and mix well, so it will be prepared easily. You can use dry fruits as per your taste. You can cook this pulav in the pressure cooker also, saute all spices and other ingredients in the cooker then fry rice also well in the cooker add water and cook for one whistle. Open and add dry fruits and coriander leaves and serve warm.
