Colourful and healthy thoren, here is the recipe for you all to try.
- Carrot 2 cup or 3-4 carrots, grated
- Methi Leaves 1 cup chopped
- Onion chopped 1
- Coconut 1/4 cup, grated
- Ginger 1/2 tsp, chopped
- Green chilies 3 sliced
- Turmeric powder 1/4 tsp
- Mustard seeds
- Curry leaves
- Salt to taste
- Oil
Method
Clean and keep methi leaves, drain water nicely and chop them and keep it aside. Grate carrot and keep it aside. Heat oil in a pan and add mustard seeds, when they pop up add curry leaves chopped ginger and chopped onion. Saute for 3-4 minutes and add the carrot and sliced green chilli, turmeric powder and salt and combine it well.
Keep everything to the centre of the pan and cook it covered on a low flame for
4 minutes. Open the lid and add fenugreek leaves saute for 2 minutes and cover and keep for 2 minutes, open and add grated coconut saute for 1 minute, cover and keep for 1 minute just check salt and remove from heat. Serve warm with rice.
NB: If you want can cook this in Microwave. Combine all ingredients except fenugreek leaves and coconut and mix well with hands in a microwave safe bowl. You can add oil if you want. Microwave in high power for 3minutes, open it and add fenugreek leaves and coconut stir well and again cook for 2 minute. Let it stand for 2 minutes and remove.
