Jack Fruit Seed and Green Mango curry ( chakkakuru manga curry), is a traditional Kerala recipe, made with Jack fruit seeds, mango and coconut. Try to include these traditional curries in your diet.
- Jack Fruit Seeds / Chakkakuru 250 gm
- Raw Mango 1 if its small , if its big then half of it
- Water 2 to 3 cups
- Turmeric Powder 1/4 tsp
- Salt
To grind
- Coconut 1 cup, grated
- Red Chilli Powder 1/2 tsp
- Turmeric Powder 1/4 tsp
- Cumin Seeds 1/4 tsp
To Temper
- Coconut Oil 2 tsp
- Mustard Seeds 1/2 tsp
- Dry Red chilli 2
- Curry Leaves 2 sprigs
Method
Take the jack fruit seeds and peel the outer coverings and the inside brown part is lightly scraped off and cut into 4, lengthwise.
Peel and slice the raw mango. In a Kadai or Sauce pan add in the sliced jack fruit seeds add 1 cup water, turmeric, and salt. Once the water has boiled, keep in low flame and cook until the seeds are 3/4 cooked. Add in the mango pieces. Add 1 more cup water and cover and cook, until the mangoes and seeds are cooked.
Meanwhile get all the ingredients under "to grind" in a blender, grind with little water to a fine paste.
Add in the grinded coconut into the gravy and mixed in, check salt, do not boil for long. Switch off the fire.
Heat a small pan with coconut oil, add in mustard seeds and once it starts to crack, add in dry chilli and curry leaves . Pour this over the curry and close with a lid so that the flavor stays. Serve with warm rice.
