Potato Egg Curry (Aloo Egg Curry)

Potato egg curry, simple and easy curry. Its spicy, mild flavoured and medium gravy dish. I know egg and potatoes are very once favourite, especially for kids. Here is recipe for you all to try. 



Ingredients

  • Eggs 4 nos, boiled
  • Potatoes 3 nos, medium size half boiled 
  • Cumin Seeds 1/2 tsp
  • Cardamom 2 nos
  • Onion 2 big, chopped
  • Tomatoes 1 big, chopped
  • Green chilli 2 nos, slited
  • Ginger Garlic Paste 1 1/2 tsp
  • Turmeric Powder 3/4 tsp
  • Chilli Powder 3/4 tsp
  • Coriander Powder 1 tsp
  • Garam Masala Powder 1/2 tsp + 1/2 tsp
  • Oil
  • Salt
  • Coriander Leaves few chopped
Method

Boil and remove the shells of the eggs and keep it aside. Half boil the potatoes and remove peel and keep it aside. 

Heat oil in a pan or medium sauce pan, saute cumin seeds until they sizzle, add cardamom and saute few seconds. 

Now add chopped onions and fry until golden. Add green chilli and saute for few seconds. Add ginger garlic paste and fry until the raw smell goes off. 

Add tomatoes and salt, saute until tomatoes become soft and blend well with onions. Add turmeric powder, chilli powder, coriander powder and 1/2 tsp of garam masala powder. Mix well and fry until the raw smell of spice powders goes off. 

Now cube the half boiled potatoes into medium sizes. Add them into the masala mix well and fry for about 2 to 3 minutes. Add enough water to cover the potatoes. Close the lid and cook on a low flame till the potatoes are done. Keep stirring in-between. A slow cooked curry tastes better , so if you have time please cook on low flame. 

Once the potatoes are cooked add the boiled eggs and stir well. Add 1/2 tsp of garam masala and half of chopped coriander leaves and saute well. Cover and simmer the gravy for 2 minutes. Check salt if need add accordingly. Put off flame and add remaining chopped coriander leaves and serve warm with Roti , jeera rice ghee rice etc..

NB: If you like can add some coconut milk at end of the gravy for a thicker consisted or fresh cream for rich taste . I didn't add coconut milk or fresh cream in this gravy. You can roast the boiled eggs and add to this gravy. Enjoy cooking.
