Oats Banana Appam, delicious, soft and flavourful. Something easy, healthy and deferent from usual appams or we can say healthier version of our sweet delicacy 'unniappam'. Here 'Vishu'(Hindu festival celebrated in Kerala, astrological New Year Day of Keralites) is nearing so thought of trying something new and I tried this and liked it very much so here is recipe for you all to try. One more thing no one can identify its made of oats.
Ingredients
- Oats 1/2 cup
- Wheat Flour 1/2 cup
- Semolina / Reva 1 tbsp
- Coconut 1 tbsp, grated
- Jaggery 3/4 cup
- Banana 1 ripe one
- Cardamom 1/2 tsp, crushed
- Baking Soda a pinch
- Salt
- Water 3/4 to 1 cup
Dry roast oats and powder it coarsely in a blender. Take a small sauce pan add jaggery and 1/4 cup of water and heat for 3 to 4 minutes or until it dissolve. After that cool it and filter the jaggery water using tea strainer and keep it aside.
In a bowl, add wheat flour, reva, powdered oats, salt and baking soda and combine well. Now add melted jaggery, mashed banana , grated coconut and cardamom powder and mix well. Add remaining water and make it to a thick but free flowing batter. Leave this batter to rest for 30 to 40 minutes. After that deep fry in oil as small balls or fry it in a unni appam chatti or paniyaram pan. Heat paniyaram pan, add few drops of oil or ghee in each hole, then pour batter 3/4 tbsp to each hole of the pan. Cook in medium heat, cover the pan for 2 minutes after that open the lid and turn other side and cook till done . Once done serve hot or warm.
NB: Please make this appam on low medium heat, else inside won't cook properly. The appam colour may change depends on the jaggery you use and the banana which you use, if you use over riped once the appam colour change into dark brown. Enjoy cooking.
