Broken Wheat Payasam, today Keralites celebrating 'Vishu'; here is a sweet treat for you all. Normally we make parippu payasam, ada payasam, wheat payasam etc on special days. This broken wheat payasam is healthy and easy to cook comparing to the whole wheat payasam. Here is simple and special broken wheat payasam recipe for you all to try.
Ingredients
- Broken Wheat 1 cup
- Water 4 cups
- Jaggery 500gms
- Water 1/2 cup
- Thin Coconut Milk 3 1/2 cup
- Thick Coconut Milk 1 cup
- Cardamom 3 nos crushed
- Cashew Nuts 1/4 cup, medium pieces
- Raisins 1/4 cup
- Coconut Pieces 1/2 cup bite size
- Ghee
Method
Pressure cook the cleaned broken wheat with 4 cups of water. Cook on medium flame for 6 to 7 whistles. Once the pressure goes down open the lid and drain the excess water. Meanwhile melt the jaggery with 1/2 cup of water. Strain the melted jaggery.
Combine the melted jaggery with cooked wheat. Add 2 to 3 tsp of ghee to this and saute well. Cook this mixture, till the melted jaggery is completely dried. Add thin coconut milk and combine well. Let it boil on medium low flame. When it attains a thick consistency, add thick coconut milk, keep the flame on low flame. Stir well and add crushed cardamom. Let it cook for 5 more minutes on low flame and remove from fire. Stir well in-between.
Heat 1 1/2 tsp of ghee in a small pan and fry the bite size coconut pieces, when it starts changing the colour keep the flame on medium and add cashew nuts and saute well, add raisins also and fry it. Pour this over the broken wheat payasam and serve warm.
NB: Keep in mind the payasam tends to thicken as it cools. The colour of the payasam depends on the jaggery which you use. One more thing before adding melted jaggery to wheat, just check that the wheat is cooked well. Enjoy cooking..
