Thai style Carrot soup, its creamy and warm. Here is quick and easy recipe for you all to try.
Heat a large pot over medium flame. Add 1 tbsp of olive oil, add chopped onion and garlic and saute for 1 minute. Add carrots and cook for 5 minutes. Add salt, basil leaves and black pepper cones and stir well. Add 2 cups of water and stir, bring to boil in low flame cover and cook for 15 minutes, or until vegetables are tender. Once its cool down a bit, transfer to a blender and blend until smooth and creamy. Now add chilli garlic sauce and coconut milk and mix well. Taste and adjust salt and pepper. Serve immediately with fresh basil.
NB: If you have natural peanut butter add 2 tbsp of that, it gives nice taste. Enjoy cooking.

- Chilli Gralic Sauce 2tsp
- Basil Leaves few
- Coconut Milk 1/4 cup, thick one
- Olive Oil
