Egg kothu chapathi, A quick and easy recipe with left over Roti/Chapathi. Here is very simple recipe for you all to try and doesn't require much time to cook.
- Roti / Chapathi 4 nos shredded into small pieces
- Eggs 3
- Onion 2 medium size, finely chopped
- Green chilli 2 or 3 chopped
- Tomato 1 medium size, finely chopped
- Capsicum green one half, chopped
- Capsicum Red one half, chopped
- Ginger 1 small piece, chopped
- Garlic 4 cloves, chopped
- Turmeric Powder 1/4 tsp
- Red Chilli Powder 1/2 tsp
- Coriander Powder 1 tsp
- Garam masala Powder 1/4 tsp
- Coriander Leaves few chopped
- Curry Leaves few
- Salt
- Oil
Method
Heat oil in a pan, add chopped ginger and garlic saute for 1 minute. Add chopped onions and fry for a min on low flame. Add chopped green chilli and curry leaves saute for a while. Add chopped tomatoes and saute till soft and mashy. Add chopped green and red capsicums and cook for another 2 minutes. Add turmeric powder, red chilli powder, coriander powder and garam masala, cook for 2 minutes on low flame. Break the eggs and add salt. Combine well everything and stir frequently to prepare egg crumbles. Add shredded roti/chapathi. Check salt if need add accordingly. Stir well everything so that the roti pieces combines well with the egg masala. Cook for 2to 4 minutes and remove from the heat. Garnish with chopped coriander leaves. Serve immediately.
