Squid Roast/ Koonthal Roast is a very popular side dish from North Kerala. Squid is a rich source of protein, vitamin and minerals including calcium, zinc, phosphorus, Vitamin B12 and Vitamin C. So here is a spicy and delicious koonthal roast recipe for you all to try.
- Koonthal / Squid 1/2 kg
- Ginger 1 medium piece , chopped
- Garlic 8 cloves, chopped
- Green Chilli 3 chopped
- Onion 2 medium size, chopped
- Curry Leaves 2 sprigs
- Dry Red chilli 2 nos
- Lemon Juice 1/2 tbsp
- Coconut 1/4 cup, sliced
- Red Chilli Powder 1 tsp
- Kashmiri Red chilli Powder 1/2 tsp
- Coriander Powder 1 tbsp
- Garam Masala Powder 1 tsp
- Pepper Powder 3/4 tsp
- Turmeric Powder 1/4 tsp
- Oil
- Water 3/4 cup
- Salt
Method
Wash and clean the squid/koonthal well. Cut it into medium strips and marinate with lemon juice little salt and turmeric powder and keep for 10 minutes.
Put the marinated squid/ koonthal into the pressure cooker with half cup water and cook for 1 whistle.
Heat 3 tbsp of oil in a pan and add sliced coconut pieces and dry chilli and fry for 2 minutes. Add chopped ginger and garlic saute for 1 minute. Add chopped onion and saute for 2 minutes, add chopped green chilli and saute well. Add little salt and saute well. Add red chilli powder, kashmiri chilli powder, turmeric powder, and garam masala, saute for a minute. Now add cooked squid / koonthal, and mix well. Cover and cook for 2 minutes. Open and add pepper powder and curry leaves stir well till the water evaporates and all the masalas coated well with squid. Its ready to serve now. Garnish with coriander leaves or sliced onions. Serve warm with rice or roti.
