Quick and Easy chicken and brocoli stir fry is super meal in itself. Its very tasty and healthy dish, here is recipe for you all to try.
- Chicken Breasts 500gm cubed
- Brocoli Florets 1 cup
- Red Bell Pepper 1 cup
- Ginger 1 piece chopped
- Garlic 4 cloves chopped
- Green Chilli 2 chopped
- Soy Sauce 1/4 cup
- Lemon Juice 1 tsp
- Pepper Powder 1/4 tsp
- Red Pepper Flakes 1/4 tsp
- Salt
- Olive oil / Sun flower oil
Method
Clean cut chicken pieces, marinate chicken pieces with 1/2 tsp lemon juice, pepper powder and salt. Keep it for 15 minutes.
Soak brocoli florets in warm water for 10 minutes, then drain and keep it aside.
Heat oil in large nonstick skillet on medium - high heat. Add chicken in several batches , stir fry 5 to 8 minutes until cooked through. Remove from skillet. Repeat with remaining chicken adding additional oil if needed. Add chopped ginger, garlic and green chillies and saute well, then add brocoli and red capsicum to skillet , stir fry 3 minutes, cover and cook for 2 minutes. Add stir fried Chicken pieces and combine well and cover and cook for 2 minutes. Add red pepper flakes and salt and combine well. Add soy sauce and mix well. Stir constantly on medium heat for 1 to 2 minutes. Its ready to serve now. Serve with cooked rice or roti.
NB: If you want this in little sauce form, then add little cornflour mixed with warm water. That also tastes good. You can add chilli sauce also.
