Pineapple Pradaman, its a variety payasam which has sweet and tangy taste. So here is a delicious and easy recipe for you all to try.
- Pineapple 1 medium size
- Jaggery 3/4 to 1 cup, small pieces or grated
- Ghee 3 to 4 tbsp
- Water 1/2 cup
- Coconut milk(thin one) 1 1/2 cup
- Coconut milk(thick one) 2 to 3 cup
- Cashew nut 2 tbsp, sliced
- Raisins 2 tbsp
- Cardamom Powder 1/2 tsp
- Dry ginger Powder 1/4 tsp
Method
Heat a thick bottemed medium size sauce pan with ghee and roast the cashew nuts and raisins and keep it aside.
Chop the pineapple and add some more ghee into the same sauce pan and put chopped pineapple and saute well until the pineapple is cooked and soft. Meanwhile melt the jaggery in water strain and keep it aside. Once the pineapple is done add the melted jaggery and cook till the colour changes to dark brown. Add the thin coconut milk and cook for 4 to 6 minutes. Stir continuously. Keep in medium flame and add the 1 cup of thick coconut milk and cook till the payasam is thick. Keep it in low flame and add the remaining 1 cup of coconut milk and combine well. Now add the cardamom powder and dry ginger powder and mix well. Check the payasam consistency if require add some more thick coconut milk and stir for 1 more minute and switch off the flame. Add the roasted cashew nuts and raisins. Serve once it cools down..
