Palada Payasam

Palada Payasam, traditional sweet delicacy from Kerala, its prepared in almost all Kerala house holds during festival of Onam and many other occasions. Here is an easy recipe for you all to try.






Ingredients
  • Rice Ada 300gm 
  • Milk 2 ltrs
  • Sugar 1 1/2 cup
  • Condensed Milk 1/2 tin
  • Water 2 cup
  • Ghee 2 tbsp
  • Cashew nuts 1/2 tbsp
  • Raisins 1/2 tbsp
  • Cardamom powder 1/4 tsp
Method


Boil 2 cups of water, put rice ada in the boiled water and keep aside for 10 to 15 minutes. Drain the water and rinse well in plain water. 


Take a medium size thick bottomed sauce pan and mix 1 cup of water and 1 litter milk and keep it to boil, once it starts boiling add the cleaned ada and cook well. Add rest of the milk and boil and keep on stirring. Once ada is cooked and archives a thick consistency, reduce the flame and add sugar slowly. Add cardamom powder and stir well and boil well for about 8 minutes. Add condensed milk and combine well and boil for 2 more minutes or until the desired consistency is achieved. Switch of the flame and add a pinch of salt and mix well. Heat a small pan with ghee roast cashew nuts and raisins and fry well and pour on top of the payasam and mix well. Serve hot or cold.


NB: Now a days we get instant palada mix in supermarkets, if you are using that please read instruction on the packet and prepare accordingly. Enjoy cooking.
