A fusion payasam with plantain and mango. Its very easy and simple dish.
- Sweet Plantain ripe 1 big / banana 2 ripe
- Mango (ripe) 1 medium
- Ghee 11/2 tsp
- Sugar 1tbsp
- Jaggery 1tbsp(grated) can use sugar instead
- Cashew nuts 6 or more (slit open the nuts)
- Raisins 1tbsp
- Dates (pitted) 5 nos
- Milk / coconut milk 2 cup
- Water 1/4 cup optional
- Semolina/ Rava 1tbsp(to get a thicker consistency)
- Cardamom powder 3/4 tsp
Method
Chop the mango and banana into irregular shaped small cubes.
Heat saucepan and pour 1tsp of un-melted ghee and melt it.
Roast the nuts and raisins for 2 minutes and transfer it to a small bowl .
Pour rest of the un-melted ghee into the same saucepan and add the chopped mango and sweet plantain and stir fry them for 1 minute until they start sticking to the bottom.
Dont smash fruits a lot , let the small chunks be visible.
Pour 1/4 cup water / milk and allow it to boil in a medium flame.
Now pour milk and sugar along with jaggery allow it to boil perfectly.
At this time add semolina along with Cardamom powder and mix well.
Check it sweetness and adjust sugar accordingly, a pinch of salt can also be added to get a perfect sweetness.
Put off the flame when the required consistency is obtained.
Add roasted nuts along with raisins n mix well.
Garnish with chopped dates and serve warm.
