Pottika / Peechinga Olan (Ridge gourd Olan)

Olan is a traditional curry. Here is variety Olan recipe with ridge gourd.



Ingredients
  • Ridge Gourd 1 cup cut into 1 inch squares
  • Green Chilli 2-3 
  • Onion 1 big sliced
  • Garlic 3 cloves 
  • Raw Plantain 1/2 cup cut into thin pieces
  • Long Beans 4 - 5 cut into 1 inch length pieces
  • Coconut milk 1/2 cup
  • Salt as required
  • Coconut Oil 1/2 tbs
  • Small Onion 4 sliced
  • Dry red Chilli 2
  • Curry Leaves 2 sprigs
Method

Cook ridge gourd, plantain and the beans together with salt and enough water to just cover the vegetables. 

Cover the pot with a lid so that the water doest not evaporate. Open and add green chilli, garlic and onion. Cook until the vegetables are soft. It take about 10-12 minutes. Add coconut milk and continue cooking at low flame for few minutes. Adjust the salt if required. Do not boil at this stage. 

Heat coconut oil in a small pan fry small onion, dry chilli and curry leaves.

Pour the fried small onion curry leaves and dry chilli over the curry, mix well and remove from heat. Serve with rice.


NB: Normaly in Malabar side we prepare olan with Ash gourd, its variety olan with ridge gourd.  Enjoy cooking..
