Beetroot rice, colourful and simple rice, perfect recipe for lunch box. Here is recipe for you all to try.
- Basmati Rice 2 cups
- Water 4 cups
- Beetrrot 1 large, grated
- Onion 1 large, sliced
- Green Chilli 4, slitted
- Tomato 1 medium size, chopped
- Ginger 1 small piece, chopped
- Cinnamon stick 1 medium piece
- Cloves 3 nos
- Cardamom 2 nos
- Cumin seeds 1/4 tsp
- Chilli Powder 1 tsp
- Turmeric Powder 1/4 tsp
- Coriander Powder 2 tsp
- Garam Masala 1 tsp
- Salt
- Oil
- Ghee 2 tsp
Method
Wash and rise rice well with water, drain and keep it aside.
Heat a presure cooker with 2 tsp of ghee. Add the drained rice and fry for 2 to 3 minutes. Remove and keep rice from the cooker. Heat oil in the cooker and add cinnamon stick, cloves, cardamoms and cumin seeds. Saute for 2 seconds. Add chopped ginger and saute for 2 seconds. Now add sliced onions and saute for 2 minutes. Add slitted green chilli and saute for 1 minute. Add salt, red chilli powder, turmeric powder and coriander powder saute for a minute. Add grated beetroot and saute for 2 minutes. Add chopped tomatoes and saute for 1 minute. Add garam masala powder and check salt. Add fried rice and combine the mix well. Add water and cook for 1 whistle. Once the pressure goes off open and serve warm with raita or pickle. Garnish with coriander leaves.
