Semiya Payasam (Vermiceli Payasam)

Semiya payasam is a classic Indian dessert prepared with roasted Vermicelli, milk and nuts.  Very easy to prepare to go with any Indian meals or as a desert.

  • Vermicelli / Semiya 1/2 cup
  • Milk 2 1/2 cup
  • Water 1/2 cup
  • Milk Maid 2 tbsp
  • Cardamom powder 1/4 tsp
  • Cashew nuts 5 -6 
  • Raisins 2 tbsp
  • Ghee 1 1/2 tsp
  • Sugar 3/4 cup
  • Vanilla Essence 


Heat a medium size sauce pan with ghee, add nuts and fry till golden , add raisins and saute and set these aside.  In the same pan, roast the semiya till slightly golden on a low flame.  Pour in that milk and add water.   Bring the milk to a boil on a low flame. cook till the vermicelli is fully cooked . Keep stirring to prevent burning. 

Add cardamom powder and sugar and continue to cook for 3 to 5 minutes on a low flame. Add milk maid and mix well . add a pinch of vanilla essence and switch of the flame

Garnish with nuts and raisins. Serve warm or chilled.
