Cheera Thoren (Amaranth Stir Fry)

Cheera (Amaranth ) leaves are nutritionally similar to beetroot and spinach. Amaranth leaves are an excellent source of carotene, iron, calcium, protein, vitamin c and trace elements. Its available in green and red in colour. 

Kerala style stir fry with coconut and onion.




Ingredients

  • Cheera / Amaranth 1 large bunch
  • Onion (medium) 1 chopped
  • Shallots / Cheriya ulli 3 nos
  • Cumin Seeds 1/4 tsp
  • Green Chilli 2 nos
  • Turmeric Powder 1/4 tsp
  • Coconut (grated) 1/2 cup
  • Mustard seeds 1/4 tsp
  • Dry red chilli 2 now
  • Curry leaves
  • Coconut oil
  • Salt to taste


Method

Clean and wash cheera / amaranth leaves and keep it for drain the water completely. Chop them up finely. Keep it aside.

Add the grated coconut in the grinder along with the cumin seeds, shallots and turmeric powder. Grind them coarsely without adding any water. keep them aside.

Heat a kadai or pan, add coconut oil, add in the mustard seeds, once its cracks add dry red chilli and curry leaves, then simmer the fire add chopped onion and green chilli and saute for few seconds.

Add in the chopped spinach on high flame cook for 1 minute . spinach will start releasing water, and once the water is evaporated. Add in salt and stir well.

Now simmer the fire and add the coconut mix, cover with a lid for a minute. Open lid and stir everything together. Stir for another one or two minute. Now put off the flame.

Serve hot with Rice.
