Palak Leaves and Egg Stir Fry

A healthy stir fry with Spinach and Egg. Goes well with rice and chapati.

  • Palak leaves 2 cups ( cleaned n chopped)
  • Egg. 1
  • Onion. 1 medium size chopped
  • Garlic. 3 cloves
  • Green chilli 3 chopped
  • Turmeric powder 1/4 tsp
  • Musturd seeds. 1 tsp
  • Curry leaves 4- 5
  • Salt to taste


Heat oil in a pan and temper musturd seeds. Add chopped onion and curry leaves. Fry for few minutes, add garlic flakes and sauté for a while. Add chopped palak leaves turmeric powder and pinch of salt. Cook it covered till the moisture is absorbed and it becomes dry.

Add beaten eggs to it and little salt. Mix well and cook till the whole mixture become dry. it may take around 2 minutes. Remove from the heat and serve hot with rice.
