Oats Upuma

Yum
Oats Upuma , easy and healthy way to start the day. Its ideal for diabetics. Here is quick and easy recipe.




Ingredients

  • Quick Cooking Oats 2 cups
  • Oil 3 tsp
  • Turmeric Powder 1 tsp
  • Mustard seeds 1 tsp
  • Urad Dal 1 tsp
  • Curry Leaves 3 sprigs
  • Ginger 1 small piece chopped
  • Green Chillies 2 slitted
  • Onion 1 medium chopped
  • Carrot 1 medium size chopped
  • Green Peas 1/4 cup
  • Green Capsicum 1/4 cup chopped
  • Coriander leaves chopped to garnish
  • Sugar 1 tsp
  • Salt to taste


Method

Heat 1 tsp of oil in a non-stick pan , add the oats and saute on a medium flame for 3 to 4 minutes or till it turns light brown colour, stirring occasionally, keep aside.

Heat the remaining 2 tsp of oil in a non-stick pan and add the mustard seeds , when the seeds crackle , add the urad dal , ginger and  curry leaves and saute on a medium flame for 1 minute. Add the onions and saute on a medium flame for 1 minute or till the onions turn translucent. 

Add the carrots, green peas and green chilli and saute on a medium flame for 2 minutes. Add the oats, sugar, salt and turmeric powder, mix well and cook on a medium flame for 1 minute, stirring continuously. 

Add 11/2 cups of hot water cover and cook on slow flame for 5 to 7 minutes, add capsicum and combine well, stirring occasionally.

Serve immediately garnished with coriander.
