Avocado, Mint and Yogurt Dip

Avocados are high in healthy monounsaturated fats- the healthy, good for your heart.  I love Avocados in any form, here is an easy dip recipe. This dip makes a great party appetiser or every day snack.





Ingredients 
  • Avocado  1 peeled, pitted and cut into chunks 
  • Greek Yogurt 1 cup (low fat)
  • Fresh lime juice  1 tsp
  • Fresh Mint leaves 1/4 cup sliced
  • Virgin Olive Oil 1 tbsp
  • Pista 1 tbsp(crushed)
  • Black pepper powder 1/4 tsp
  • salt a pinch

Method 

In a medium bowl, mash together avocado, yogurt, lime juice, pepper powder and salt until creamy or blend in a blender until smooth. fold in mint leaves, crushed pista, drizzle with oil and top with mint leaves and pistachios. 

Serve with Tortillas , with some fresh vegetables or even great as a sandwich spread.
