Salmon with Indian masalas and coconut curry

I love Salmons, so tried a light and quick salmon curry with fragrant indian spices.




Ingredients
  • Salmon fish 8 slices
Masala
  • Turmeric Powder 1/2 tsp
  • Chilli Powder 1 tsp
  • Coriander Powder 1 tbsp
  • Salt 1/2 tsp
  • Fresh Lemon 2 tbsp
  • Oil 
Curry 

  • Onion 1 chopped
  • Green Chilli 2 chopped
  • Garlic Cloves 4 chopped
  • Curry Leaves 3 sprigs
  • Grated Coconut 2 tbsp
  • Turmeric Powder 1 pinch
  • Ground Cumin 1/2 tsp
  • Pepper 
  • Salt
  • Coconut milk 400ml
  • Coriander Leaf 2 tbsp
  • Oil

Method

In a bowl mix all the ingredients for fish masala. Make a paste and if its too thick , then add a few teaspoons of water. Cover the fish with this masala paste and keep aside for 15 minutes.

Heat oil in a non stick pan . For a more flavoured taste, i have used coconut oil. Bring the fish into the pan and fry it till golden brown. Keep aside.

Heat oil in a pan. Add chopped onion and 1/2 tsp salt. Stir fry until onion starts change color. At this point, add chopped green chilli and garlic , fry for about 1 minute on medium flame.

Add a pinch of turmeric, 1/2 tsp cumin powder, chopped curry leaves. Fry for 30 seconds, then add fresh coconut. Mix well and fry until coconut becomes golden brown in colour.

Add coconut milk, some pepper and salt. Put the flame in low and boil for 2 seconds. Add chopped coriander leaves.

Lower the flame and bring the fried fish masala into the curry. Let it simmer for 5 minutes on low medium flame.

Serve hot with rice or bread
