Tomato Thokku

Tomato thokku, its a delicious side dish and goes well with curd rice, dosa and chapatti. This one cooking takes time but good thing is that we can store in the refrigerator and it stays for few weeks. Here is recipe for you all to try.



Ingredients
  • Tomatoes 5 nos, ripe once
  • Gingelly oil 3 tbsp
  • Mustard seeds 1/2 tsp
  • Red Chilli Powder 2 tsp
  • Kashmiri Chilli Powder 1 tsp
  • Turmeric Powder 1/2 tsp
  • Salt
Method

Wash and chop tomatoes. In a pan or kadai heat 1 tbsp ofgingely oil and splutter mustard seeds. Now add chopped tomatoes and salt. Saute till the water content evaporates. Please take care the heat, keep it in the low flame and do. When it becomes thick add red chilli powder, turmeric powder and kashmiri chilli powder. Add 2 tbsp of gingerly oil saute for few minutes till raw smell goes off. Check salt and chilli if need add accordingly. Stir in between so that it won't get burnt. Let it cool and then store in an airtight container. Use a dry spoon every time. It stays good for a month. Serve with Dosa or curd rice or chapathi. 

NB:I used 5 medium fully ripe tomatoes and got one small bowl tomato thokku as shawn in the picture. If you want more quantity make accordingly. Enjoy cooking..
