Sweet Potato Stir fry ( Madhurakizhangu Varavu / Sakkaravalli Kizhangu Poriyal )

An easy recipe with sweet potato, its a combination of sweet and spicy. Here is recipe for you all to try. 


Ingredients
  • Sweet Potato 3 nos, sliced
  • Onion 1 big, chopped
  • Green chilli 2 nos, slited
  • Turmeric Powder 1/2 tsp
  • Sambar Powder 3/4 tsp to 1 tsp
  • Curry Leaves few
  • Salt
  • Oil
  • Mustard Seeds 1/2 tsp
  • Urad Dal 1/2 tsp
  • Cumin Seeds 1/4 tsp
  • Asafoetida / Hing 1 pinch
Method

Clean and Wash sweet potato and pressure cook for one or two whistle on medium flame. Once the pressure goes drain water and keep it to cool down. Then peel the skin and chop the cooked sweet potato into medium size cubes and keep it aside. 

Heat oil in a pan and splutter mustard seeds, urad dal and jeera. Add chopped onions, curry leaves and hing. Saute till onion turns translucent. 

Now add the cooked potato cubes, turmeric powder, sambar powder and salt. Combine well and saute in medium low flame. Let it roast well till raw smell of sambar masala goes. Stir in between. Garnish with coriander leaves or curry leaves. Serve with warm rice. 

NB: If you want can add crushed coconut with cumin seeds also in this, that also tastes good. Enjoy cooking..
