Cashew Curry with Vegetables, Sri Lankan Style.

Cashew nut curry, this is a popular, rich and highly nutritious curry from Sri Lanka. Its a fragrant and flavourful curry with cashew nut and vegetables. Perfect to serve to vegetarian guests for a dinner party. Here is recipe for you all to try. 

  • Cashew 400gm, (raw)
  • Baking Powder 1 tsp
  • Turmeric Powder 1 tsp
  • Red chilli Powder 1/2 tsp
  • Coriander Powder 1 tsp
  • Carrots 2 nos, small cubes
  • Green Peas 3/4 cup
  • Onion 1 medium size, sliced
  • Green Chilli 2 nos, slited
  • Coconut Milk 3/4 cup, thick one
  • Cinnamon stick 1 piece
  • Curry Leaves 2 sprigs
  • Salt
  • Oil

Place the cashews in a bowl and pour boiling water and add 1 tsp baking powder and soak over night. Drain the water and wash well before cooking. Heat 1 1/2 tbsp of oil in a medium size sauce pan and once its hot add the cinnamon stick and saute for a second, then add sliced onion and stir well. When the onions turn brown colour add slited green chilli and curry leaves. Now add the turmeric powder, red chilli powder and coriander powder saute well. Add cashew and salt, stir well. Add water and keep it for boiling. Once the bubble start coming add carrot and green peas. Cover and cook until the cashew and vegetables are done. Then keep flame into very low and add coconut milk and stir well. Once it start boiling remove from fire. Check salt if need add accordingly. Serve warm with Rice, Appam or Roti.

NB: If you want can add other vegetables also as potato, capsicum etc. I didn't add potato as it will come as stew taste then. Enjoy cooking..
