Kerala style pumpkin with green gram curry, its very tasty curry with little sweetness of pumpkin and healthy green gram. Here is simple recipe for you all to try.
- Greengram 1 cup
- Yellow Pumpkin 200gm (deseeded and cut into cubes)
- Green chilli 5, slitted
- Garlic 4 cloves, sliced
- Cumin seeds 1 tsp
- Turmeric Powder 1/2 tsp
- Red Chilli Powder 1/2 tsp
- Coconut 1 cup, grated
- Salt
- Coconut Oil
- Mustard seeds 1 tsp
- Dry Red chilli 2 nos
- Small Onion/ Shallots 2 nos, sliced
- Curry Leaves 2 sprigs
Method
Cook the pumpkin with green gram, garlic, green chilli, salt, 1/4 tsp turmeric powder and 1/4 tsp red chilli powder. Smash the pumpkin pieces moderately, so that it mix well with the green gram, it should be thick not watery.
Grind together grated coconut, cumin seeds, 1/4 tsp turmeric powder, 1/4 tsp red chilli powder and salt.
Add ground coconut mix with the cooked pumpkin - green gram and stir well. Add water to get the required consistency. Bring to boil for 2 minutes. Put off flame.
Heat coconut oil in a small pan splutter mustard seeds, then add sliced small onion and saute for few seconds, add dry red chilli and curry leaves and saute well until the onion turns golden brown. Pour over the curry and serve with warm rice, chapati or dosa.
