Egg Masala Curry

Egg masala Curry, boiled eggs coated with exotic masalas. Here is recipe for you all to try.


  • Eggs 4 nos
  • Onion 2 medium size, thinly sliced
  • Tomato 1 large size, chopped
  • Ginger 1 small piece, chopped
  • Garlic 5 cloves, chopped
  • Turmeric Powder 1/4 tsp
  • Red Chilli Power 1/2 tsp
  • Kashmiri Chilli Powder 1/2 tsp
  • Coriander Powder 1 tsp
  • Garam Masala Powder 1/2 tsp
  • Curry Leaves few
  • Salt 
To roast and grind
  • Dry Red Chilli 2 nos
  • Shallots/ Small onion 6 nos, sliced
  • Coriander Seeds 1 1/2 tsp
  • Cinnamon 1 medium size piece 
  • Cardamom 2 nos
  • Fennel Seeds 1/2 tsp
  • Black Pepper 1/2 tsp

Boil egg for few minutes. Break open and remove the shell carefully. Cut the eggs as half and keep aside. Heat 1 tsp oil in a pan and roast the ingredients under " to roast and grind" till onions turn golden brown. Cool down and grind to a semi fine paste. 

Heat a medium size pan and with 2 tbsp oil on medium heat. Put chopped ginger and garlic and saute for 1 minute. Add sliced onion and saute for 2 minutes. Add salt and mix well. Cover and keep for 2 minutes. Add red chilli powder, kashmiri chilli powder, garam masala, turmeric powder and coriander powder and sate well till the raw smell goes. Add chopped tomato and cook till it becomes soft. Add ground masala and mix little water also and simmer for 2 minutes. Check salt if require add accordingly. Add halved egg pieces and simmer for 1 minute. Garnish with curry leaves and chopped coriander leaves. Serve with appam or roti.
