Potato Mint Rice

Potato Mint Rice, simple and delicious lunch box dish. Here is easy recipe for you all to try.




Ingredients
  • Potatoes 4 nos, chopped
  • Mint Leaves 2 bunches
  • Coriander Leaves 3 tbsp, chopped
  • Green Chilli 5 to 6 , slitted
  • Ginger small piece, chopped
  • Red Chilli Powder 1/2 tsp
  • Onion 1 medium size, chopped
  • Cooked Rice 2 cups
  • Oil
  • Salt
Method

Heat oil in a medium size pan on medium flame. Add chopped ginger and garlic and saute for 1 minute. Add chopped onion and saute for 2 minutes, add slitted green chilli and saute for a minute. Add the mint leaves and cook until it becomes soft. Add chopped potatoes are tender and cooked. Close and cook till potatoes are soft. Add red chilli powder and salt and stir well. Add chopped coriander leaves and combine well. Add cooked rice and mix well until the mint potato masala coats well. Cover and keep for 1 minute. Put off flame and serve immediately with pickle or raita.

NB: If you want can add few green peas that also tastes good. Enjoy cooking.
