Sausage and Lentil Stew

Warm and hearty Lentil stew with carrot, onion, spinach and sausage. A one - pot dish you can have with friends and family.

  • Lentils 1 cup
  • Chicken broth 2 cups
  • Smoked chicken or Turkey Sausage 1 pkt( i used normal chicken sausage)
  • Chopped Carrots 1 cup
  • Diced Tomatoes 1 can (i used fresh tomatoes)
  • Spinach 1 cup chopped


Rinse lentils under cold water, and place them into an empty slow cooker. Add chicken broth, and sliced sausage . Add the tomatoes and a cup of chopped carrots. 

The broth and the seasoning from the sausage is enough to flavour this dish there is no need for additional spices. If you are using normal sausage then add spices like 1/2 tsp red chilli powder, 1 tsp coriander powder, 1/2 tsp black pepper powder and salt. Cover and cook for 30 minutes. 

Then add Spinach and stir well and cook for 15 minutes. Open and check the salt and spices if need add more then stir and combine well. Put off the flame and serve warm with brown bread or steamed rice.
