Creamy Zucchini Carrot soup, a healthy vegetable soup. They are so naturally creamy and here is an easy delicious recipe for you all to try.
- Onion 1 medium finely diced
- Butter 3 tbsp
- Flour 3 tbsp
- Chicken broth or water 1 cup
- Milk 2 cups
- Zucchini 2 medium grated
- Carrot 1 medium , grated
- Salt
- Pepper
Method
In a large saucepan, saute the onion in butter for 5-7 minutes, until the onion is tender. Stir in the flour until combined, cook for 1 minute. Stir in the water, milk, salt and pepper and bring to a boil. Reduce heat, add the zucchini and carrot and cook for 5 minutes until veggies are tender. Make sure to stir often, so the soup doesn’t scorch.
Serve warm.
