An excellent side dish with Rice.
- Brocoli 1 medium size
- Carrot 2 small finely chopped
- Shallots 1/2 cup sliced Or Onion 1 medium size chopped
- Ginger 1 small piece chopped
- Green chillies 4-5 slitted
- Coconut 1/2 cup grated
- Turmeric Powder 1/4 tsp
- Salt
- Mustard seeds 1 tsp
- Curry Leaves 2 sprigs
- Dry Red Chilli 2
- Oil
Method
Blanch the brocoli florets that is cut the brocoli into florets and put them in boiling water to which a little salt and a pinch of turmeric powder is added. Let it remain in the water for 5 minutes. Then drain the water and put into cold water for 2 minutes, drain water completely and keep it aside.
Finely chop the brocoli and carrot and keep it aside.
Heat oil in a pan , splutter mustard seeds and add dry red chilli and curry leaves. Add chopped ginger and saute for 2 seconds. Add sliced shallots and green chilli saute well. Then add chopped carrots and cook for 2 minutes. Now add chopped brocoli, stir well and cook for 2 minutes. Add turmeric powder , salt and sprinkle little water, mix well and cook in low flame for 4 minutes.
Add grated coconut and few curry leaves and stir well for 1 -2 minutes. Remove from flame and serve with Warm rice or roti.
NB: They will lose their crunchiness if cooked for a long time, so don't cook more time. Enjoy cooking.
