Beetroot Thoran ( Beetroot stir fry with coconut)

A colourful and nutritious side dish. It has some spiciness and sweetness. Here is the simple recipe.



Ingredients
  • Beetroot 1 (large)
  • Onion 1 (medium)
  • Ginger 1 small piece
  • Green chillies 3 nos
  • Turmeric Powder 1/4 tsp
  • Chilli Powder 1/2 tsp
  • Coconut 1/2 cup Grated
  • Oil 2 tbsp
  • Mustard seeds 1tsp
  • Dry red chillies 2 
  • Curry Leaves 2 sprigs
  • Salt

Method

Chop beetroot into very small pieces. Chop onion and ginger into very small pieces. Slit green chillies.

Heat Oil in a pan and splutter mustard seeds add ginger pieces, dry red chillies and curry leaves. 

Add onion and saute for a minute then add beetroot and green chilli into it and saute for a minute, add turmeric powder, red chilli powder and salt saute well, sprinkle little water and cover it with a lid and cook in low flame. 

Keep mixing at regular intervals for 10 to 15 minutes until it is well cooked. In between add coconut and mix well. Check salt and serve with hot rice.
